Glow-Giving Skin Food Salad Recipe by Emily English

This salad is loaded with ingredients that support your skin barrier, feed your gut, and give your complexion that radiant glow. Ingredients (Serves 2): 

  • 2 handfuls of shredded white cabbage 
  • 1/2 avocado 
  • 3 heaped tbsp bio live yogurt 
  • 30g feta cheese 
  • 1 tsp Dijon mustard 
  • 1 tsp honey 
  • A large handful of fresh basil 
  • Juice of 1 whole lemon 
  • 200g sweet potato (skin on), diced 
  • 1 tin chickpeas (drained) 
  • 1 heaped tsp corn flour 
  • 1 tbsp harissa paste 
  • Pomegranate seeds for garnish 

 

Instructions:

1. Prepare the Roasted Sweet Potatoes and Chickpeas

Preheat your oven to 210°C (fan). Dice the sweet potato into 2 cm cubes, keeping the skin on for added fibre and nutrients. Pat the chickpeas dry after draining. In a bowl, toss the sweet potato and chickpeas with olive oil, 1 tsp of corn flour, and 1 tbsp of harissa paste. Season with salt and pepper, spread evenly on a baking tray, and roast for 25 minutes, stirring halfway through.

2. Make the Creamy Avocado-Basil Dressing

While the sweet potato and chickpeas are roasting, prepare the dressing. In a blender, combine: 

  • 1/2 avocado 
  • 3 heaped tbsp of bio live yogurt 
  • Juice of 1 lemon 
  • 30g feta cheese 
  • A large handful of fresh basil leaves 
  • 1 tsp Dijon mustard 
  • 1 tsp honey 
  • A pinch of salt 
  • Blend until smooth. Taste and adjust the seasoning with more lemon juice, honey, or mustard as needed. 

3. Assemble the Salad

Finely shred the white cabbage until you have two large handfuls. Toss the cabbage in 2/3 of the dressing and let it sit for a few minutes to absorb the flavours. To serve, spoon half of the dressed cabbage into bowls, then top with the roasted sweet potato and chickpeas. Add pomegranate seeds, extra feta, and drizzle with the remaining dressing.
